Ingredients

  • 1 lb Pork Breakfast Sausage
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups fresh spinach, chopped
  • 8 large eggs
  • 1 1/2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Cooking oil for greasing

Instructions

  1. Preheat the Oven
    • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking oil.
  2. Cook the Sausage
    • In a large skillet over medium heat, cook the pork breakfast sausage until browned and cooked through. Break it into crumbles with a spatula as it cooks. Remove any excess fat.
  3. Add Aromatics
    • Add chopped onions to the skillet and sauté until they become translucent. Add minced garlic and cook for an additional minute until fragrant.
