Chorizo and Potato Breakfast Skillet

Directions
Ingredients:
- 1 lb pasture-raised pork chorizo sausage
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, diced into small cubes
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 4 large eggs
- Fresh cilantro or parsley, chopped (for garnish)
- Optional: shredded cheese, avocado slices, hot sauce
Instructions:
- In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 2-3 minutes.
- Add the diced potatoes to the skillet and cook, stirring occasionally, until they begin to brown and become tender, about 8-10 minutes.
- Push the potatoes to one side of the skillet and add the pasture-raised pork chorizo sausage. Cook, breaking it up with a spatula, until it's browned and cooked through, about 5-7 minutes.
- Once the chorizo is cooked, add the diced bell peppers to the skillet. Cook for an additional 2-3 minutes until the peppers are slightly softened.
- Season the skillet with paprika, cumin, salt, and pepper. Stir everything together until well combined.
- Create four wells in the skillet and crack an egg into each well. Cover the skillet and cook until the eggs are cooked to your desired level of doneness, about 4-6 minutes for runny yolks or longer for firmer yolks.
- Once the eggs are cooked, remove the skillet from heat. Garnish with chopped cilantro or parsley.
- Serve the chorizo and potato breakfast skillet hot, straight from the skillet, with optional toppings such as shredded cheese, avocado slices, and hot sauce on the side.
