Chorizo and Potato Breakfast Skillet

Directions

Ingredients:

  • 1 lb pasture-raised pork chorizo sausage
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced into small cubes
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh cilantro or parsley, chopped (for garnish)
  • Optional: shredded cheese, avocado slices, hot sauce

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 2-3 minutes.
  2. Add the diced potatoes to the skillet and cook, stirring occasionally, until they begin to brown and become tender, about 8-10 minutes.
  3. Push the potatoes to one side of the skillet and add the pasture-raised pork chorizo sausage. Cook, breaking it up with a spatula, until it's browned and cooked through, about 5-7 minutes.
  4. Once the chorizo is cooked, add the diced bell peppers to the skillet. Cook for an additional 2-3 minutes until the peppers are slightly softened.
  5. Season the skillet with paprika, cumin, salt, and pepper. Stir everything together until well combined.
  6. Create four wells in the skillet and crack an egg into each well. Cover the skillet and cook until the eggs are cooked to your desired level of doneness, about 4-6 minutes for runny yolks or longer for firmer yolks.
  7. Once the eggs are cooked, remove the skillet from heat. Garnish with chopped cilantro or parsley.
  8. Serve the chorizo and potato breakfast skillet hot, straight from the skillet, with optional toppings such as shredded cheese, avocado slices, and hot sauce on the side.
