Ingredients
- 1 package Chicken Cheddar Jalapeño Bratwursts
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium-sized red onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves
- 1 cup cooked quinoa or rice (optional, for serving)
- Fresh cilantro or parsley for garnish
- Lime wedges for serving
Instructions
- Cook the Bratwursts
- In a large skillet over medium heat, add a touch of olive oil. Cook the chicken cheddar jalapeño bratwursts until browned on all sides and cooked through. Once cooked, remove them from the skillet and set aside.
- Sauté Vegetables
- In the same skillet, add another tablespoon of olive oil if needed. Sauté the sliced red and yellow bell peppers, red onion, and minced garlic until they are softened and slightly caramelized.
- Seasoning
- Sprinkle smoked paprika, ground cumin, salt, and black pepper over the vegetables. Stir to coat evenly.
- Add Bratwursts and Tomatoes
